For the first day of fall, we're finalizing this year's blend of Percheron. Our Head Cidermaker Seth walked us through the finishing steps to our funky fall cider.
"In previous weeks, we pulled cider aging in barrels from our Brett Barn. We taste through these barrels, and make a selection that will get blended together for Percheron.
Back in cider house, we taste through the previous batches from years past and discuss the similarities in each, as well as the concept for the final cider. The blend was done blind and then sampled by everyone on the production team.
Today we set up a vertical tasting of previous years of Percheron to compare this year's blend against the others. The different colors you see in each glass are due to several different factors, mainly oxidation, and maceration. We take notes on everyone’s preference and the final call was made by myself."
