Cidermaking is a craft that combines patience, blending, and lots of tasting. To create Percheron, we blend together ciders that have been aged in French oak barrels containing Brettanomyces yeast. This leads to the "Brett" character that describes a certain funky aroma and flavor that can be really delicious and intriguing in ciders and beers.
This week we pulled out all the barrels that have been resting comfortably in our "Brett barn" on the farm. Some of these barrels have been aging ciders for four months; others have been resting for the better part of two years!
Our cidermakers taste through each barrel to see which of these aged ciders we will blend to create this year's release of Percheron. The official release for Percheron will be at our inaugural Virtue Apple Fest, from Sept. 29 to Oct. 2 on our farm. This event is family friendly and free to attend.
